Delicious paleo chocolate chip muffins made with coconut flour. These muffins are soft, fluffy, and moist. They are a healthy dessert and are gluten free, grain free, and dairy free.
Use a spoon to the scoop the batter into the baking cups. Fill them about 3/4's full.
Bake them at 350 degrees for about 20 minutes or until lightly browned.
Notes
If you use coconut oil in the recipe, you may want to let the eggs warm up to room temperature before adding them into the mix, otherwise the coconut oil can harden and clump.
