Paleo Blueberry Pancakes – Gluten free, dairy free

These fluffy paleo blueberry pancakes are the ultimate delicious breakfast food and healthy too!

I love pancakes! For some reason pancakes are always hard to make. I remember even when I used to use a pre-made baking mix many years ago I had a hard  time flipping them just right. I don’t know how some people get pancakes to come out so perfect looking! If you’re one of those people who know how to make perfect looking pancakes, I’d like to know your secret. I’m still working on it! I made these paleo blueberry pancakes on Sunday and decided to take some pictures of them so I could post the recipe.

I usually make these paleo blueberry pancakes once a week to switch up my breakfast and have something other than eggs. I love scrambled eggs, sunny side eggs, and omelets, but it’s nice to have something different sometimes too!

I make a large batch of this recipe and freeze any leftovers so I can reheat them during the week or the following weekend.

This recipe for paleo blueberry pancakes uses coconut flour as the only flour. Coconut flour is one of my favorite flours to cook with! I always use it for baking paleo bread and muffins.

These paleo blueberry pancakes are gluten free, grain free, dairy, free, and nut free. So they’re perfect for anyone with food sensitivities or allergies.

Making Paleo Blueberry Pancakes

I always make pancakes on my stove top using a skillet with some coconut oil. I’ve actually never tried making pancakes on a grill before. So if you try this recipe for paleo blueberry pancakes and cook them on a grill, let us know how they turn out. I just got a teflon free George Foreman grill for Christmas, but haven’t had a chance to try cooking pancakes on it yet. Maybe it’s easier to flip pancakes and get them to cook more evenly on a grill?

My Go-to Oil for Cooking Pancakes

For pretty much all my recipes, coconut oil is my go-to cooking and baking oil. If you can have dairy, another great option for cooking these paleo blueberry pancakes is to use grass-fed butter. I recently added a small amount of dairy back into my diet.

Olive oil is great for cooking too, but I don’t usually use it for pancakes unless I run out of coconut oil.

Delicious Paleo Blueberry Pancakes Made with Coconut Flour - These paleo pancakes are soft and fluffy! They're gluten free and dairy free.

Paleo Blueberry Pancakes Recipe

Ingredients:

  • 1/4 cup coconut flour
  • 1/3 cup coconut milk or another kind of milk
  • 3 eggs
  • 2 tablespoons coconut oil or any kind of oil
  • 1 tablespoon honey (I use raw honey)
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon vanilla extract
  • 1/2 cup blueberries
  • pinch of sea salt
  • pure maple syrup – for topping

Directions:

  1. Mix all wet ingredients in one dish and all dry ingredients in another dish.
  2. Slowly add the dry ingredients to the wet ingredients.
  3. Add coconut oil or butter to your skillet and turn the heat on low to medium.
  4. Pour/scoop the batter on to your skillet. I make two at a time that way they are easy to flip.
  5. After I put the batter on the skillet, I use my fingers to drop 3 to 6 blueberries on each pancake. Then flip them.
  6. Cook until lightly browned on both sides.
  7. Let cool and add a little bit of pure maple syrup to taste.

Add Maple Syrup to Taste

I love adding a little bit of pure maple syrup to these paleo blueberry pancakes. Make sure you use pure maple syrup. Pure maple syrup can be pricey, but it’s worth it! Most maple syrup is made of artificial ingredients such as high fructose corn syrup, preservatives, and caramel color to make it look like the real stuff.

    Love you Health Extremist! 😁 I made the pancakes today for an early dinner. I modified these areas based on my last year of learning to cook Paleo.

    Added 1 1/2 tablespoon of coconut flour
    Added 1/2 of a 1/4 teaspoon of Baking Powder

    Used SO Delicious Coconut Milk

    But I slightly warm my liquid ingredients then top with a teaspoon of coconut oil.

    I add blueberries after the griddle has created the batter to form then flip. I’m not the best flipper tho. But they turned out a m a z I n g!

    These tasted delicious but they were so thin, not sure what I did wrong? The second batch in the pan was a bit better because the batter sat for a while but still not fluffy like yours!

      Hi Dana, glad you liked the taste! You may want to try bringing all the ingredients to room temp before cooking them. You can try adding a 1/2 teaspoon of apple cider vinegar and mix it with the baking soda to get them fluffier.

    I just made these on my skillet and they were delicious. I didn’t have any coconut flour so I used almond flour. They were a bit to runny for the skillet so next time I will make them in the stovetop. I topped them with sliced bananas and maple syrup. Yummy!

    hello do i have to put coconut oil in the wet ingredient or only on the skilletthe butter must be liquid or half smootha nd solid?

      Just make sure to measure the coconut oil when it’s liquid. Just warming it a little bit will cause it to liquefy.

    I made these this morning and fried them with bacon grease in a cast iron skillet and had with a side of bacon. My first pancakes since going Autoimmune Paleo over 4 months ago. Delicious!! I froze the leftovers and am looking forward to having them again!

    Followed recipe to a T. They were very runny and flat. Did not look like pictures. Is there so,etching missing in the recipe?

      The batter starts out running, but you must beat it well. The longer you beat it the batter thickens.

      Mine came out the same way…I did use flax eggs maybe that’s why. I put the rest of the batter on a baking sheet and just popped them in the oven. Hopefully that will work.

    I have that ceramic coated grill, but because of the deep grooves, I did not think it would work for pancakes. It works great for paninis though.

    I would like making these with a waffle maker. I have a 2 waffle (4inch) Belgian waffle maker. I don’t have coconut flour, could I use oats that I grind into flour instead?

    Also, where are the blueberries in the ingredients?

      Hi June, these work great with a waffle maker. You can definitely use oats. I haven’t tried it myself though so you may need to use a different amount for the flour. I use 1/2 cup of blueberries for the pancakes. It’s listed in the ingredients 🙂
