Avocado Salad Recipe with Dressing

Avocados add a delicious rich and creamy taste to any recipe. For an avocado salad you can use smashed or chopped avocados. For this avocado salad recipe I used an avocado in combination with a few other ingredients to create a salad dressing.

This avocado salad recipe is my absolute favorite salad recipe which I usually have for lunch. To add a little variety I will add different vegetables, sprouts, or nuts to the salad.

 

This avocado salad recipe is pretty simple and most likely you already have all of the ingredients in your kitchen.

For this avocado salad recipe I added  a ½ cup of lentil sprouts. Although, you can use any type of sprouts for this avocado salad recipe. Sprouts are extremely beneficial for health. Sprouts contain more vitamins and minerals than some vegetables. For example, broccoli sprouts contain 50% more cancer fighting benefits than broccoli itself. You can purchase sprouts in the local health food store or make them yourself. You can read my recent post on how to make sprouts. The same steps apply for making most kinds of sprouts.

 

Avocado Salad Ingredients:

  1. 1 Head of Romaine Lettuce
  2. ½  Red Onion
  3. 3 Stalks of Celery
  4. ½ Cup of Lentil Sprouts
  5. 1 Large Carrot
  6. ¼ Cup of Flaxseeds

 

Avocado Salad Dressing:

  1. 1 Avocado (mashed)
  2. 3 Tablespoons Lemon Juice
  3. 3 Tablespoons Olive Oil
  4. Dash of Sea Salt
  5. Dash of Ground Pepper
  6. ½ Teaspoon Fresh Parsley Leaves

 

Salad Instructions:

Prepare avocado salad ingredients in a large bowl.  Blend the dressing ingredients well and pour over the salad.
