Paleo Blondies Recipe with Chocolate Chips

Paleo Blondies Recipe (with Chocolate Chips) - These blondies are gluten free, dairy free, grain free, and refined sugar free.I’ve been wanting to have a sweet treat recently and one that I haven’t had since I was little was blondies! I remember enjoying them as a child with m&m’s. This paleo blondies recipe always reminds me of my childhood and enjoying them with my brothers.

This recipe for paleo blondies is gluten free, grain free, and diary free. They’re vegan and paleo friendly as well. These blondies are also free from any refined sugar, making them a healthy dessert treat. They are sweetened with raw organic honey.

I made these paleo blondies for the first time 2 weeks ago, the day my younger brother moved back to college. I gave him and his girlfriend a couple to take for their trip back to school. I was glad to hear they enjoyed them and even asked for the recipe!

Easy and Delicious Paleo Blondies

This recipe for paleo blondies is easy and quick to make. Just throw together all the ingredients in a bowl and pour it into a glass pan to bake.

When I add in the chocolate chips, they remind me of chocolate chip cookies but just thicker.

These paleo blondies are soft, fluffy and moist. I love eating them fresh out of the oven while they’re still warm.

Recently, I’ve been experimenting with almond flour more. Usually, I try to bake most paleo friendly desserts with only coconut flour. I love coconut flour because it’s healthy and it’s a great option for those that have nut allergies and can’t have almond flour. But for this recipe, I used a combination of both almond flour and coconut flour.

Varying the Paleo Blondies Recipe with Chocolate Chips and/or Nuts

As a kid I always loved chocolate chips in blondies so I decided to add them to paleo blondies as well; however, you can make them without the chocolate chips too!

Another great way to vary this recipe is to add some chopped nuts, such as walnuts or almonds. You can add these with or without the chocolate chips too. This is a great way to get some healthy nuts into your diet, plus the blondies taste great with a little extra flavor and crunch from the nuts.Delicious Paleo Blondies Recipe (gluten free and dairy free) - Delicious, soft, and moist! Paleo Blondies Recipe

Ingredients:

  • 1 ¾ cup almond flour
  • ¼ cup coconut flour
  • ¼ cup raw honey
  • ½ cup coconut oil or butter
  • 1 egg
  • 2 tablespoons water or milk
  • ½ teaspoon baking soda
  • ½ teaspoon apple cider vinegar
  • 1/8 teaspoon sea salt
  • ½ cup chocolate chips (they are dairy free) (optional for recipe)

Directions:

1. Mix all the dry ingredients in a large bowl and all the wet ingredients in a separate bowl.
2. Combine the wet and dry ingredients. Stir well.
3. Add the chocolate chips to the batter (optional)
4. Pour/scoop the batter into a loaf pan and use a spoon to spread it evenly out across the pan.
5. Bake at 350 degrees for about 15 minutes.
